I went to school with a girl named Echo. She was named for the story of Echo and Narcissus. Out of your list I like Persephone, Luna, and Odysseus.

Aphrodite - can't see it being used as a legit name. I think it should stay a GP.
Artemis - possibly a mn if you're daring, but again, keep as a GP.
Athena - YAY one of my favorites. So beautiful, really symbolic and I love the way it sounds.
Apollo - nice, a bit too much but if you like it then go for it!
Hera - I like it, I see no problem with it.
Poseidon - unusable imo.
Iris - very nice, nms but nice name.
Selene - I like it. Usable, pretty, nice meaning, good sound. Only reason against my using it is I have a friend named Celine and that's too close for me.
Odysseus - really over the top for me.
Kalliope - I prefer Calliope, but I always found it hard to pronounce. Maybe a good mn.
Thalia - very pretty!!
Persephone - I thin kit's fine, I'm not fond of it but it's a nice name.
Xanthe - usable but ugly imo.Venus - unusable.
Jupiter - again, not usable, too well-known as a planet.
Saturn - I think planet names in general aren't particularly usable.
Minerva - not bad, reminds me of Harry Potter though.
Luna - beautiful! Again, though, strong connection to Harry Potter.
Juno - nice, maybe a bit weird because of the movie but a good name. I prefer June.
