I am liking German names lately and I think it's a nice way to honor my DH's German heritage. Jane is set as the middle name, as it's a family name that we want to use. What do you think of...

Greta
Heidi
Katharina
Emilie(I know it's super popular)

Any other suggestions?

I love German names. Heidi being my favorite of them all. Greta and Gretchen are the other tops ones on my list for that kind of name.

Emilie is a nice, German name. However, Emmaline is a nice alternative.

Heidi is gorgeous! I've always loved it. Katharina is very sweet too, and I'm also a fan of Gretel, though I don't really like Emilie that much.

Only other German name I can think of that I like is Gretchen - though it does have a kind of harsh sound to it, I still like it :-)

Would you pronounce Katarina and Katharina the same? I know according the BtN they are pronounced the same, but I wonder what a typical person in the US would say?

I personally would say them the same, but then again, I'm a BtNer. I think most people in the US would say kath- at first glance, rather than kat-. You could always just use Katarina instead, since it's German as well.

I like the sound of Greta Jane. Heidi is all right, but I like Katharina much more.

Have you considered Johanna, the German form of Jane?

Greta -- Lovely. I like Margarethe ("mar-gar-ETT-a") too.
Heidi -- Cute, but it's almost too cutesy to stand alone. It's short for Adelheid, but I that's not everyone's cup of tea.
Katharina -- Lovely.
Emilie -- Yes, it's popular. But I love its spunk.

Others:

Elsa, Anna, Anneliese ("anna-LEE-za")(nn Annelie), Beatrix, Maria (nn Mitzi), Charlotte (nn Lottie / Lotte), Wilhelmina (nn Willa, Billie, Mina, Minna), Zella, Lorelei, Amalia, Clara, Alix, Petra, Liesl, Marta, Melusine, Sabine, Renate, Emmeline, Roselinde.

Some of these might be more Scandinavian than German. Let the buyer beware.

Frieda, Franziska, Editha, Aloisa, Veronike, Trudy, Regine, Natalia, Monika, Mathilde, Lenore, Konstanze, Adriane.

Correction: Roselinde (from the original post) should be Rosalinde, according to my baby name book "From Aaron to Zoe." It's pretty accurate, as those books go.
