I like Elizabeth "Beth" and Samuel "Sam" the best. Not only are those names gorgeous, they also fit in with the one syllable nn thing you have going and I like consistency! As for suggestions not on your lists, I like Frederick "Fred", Joseph "Joe", Maxwell "Max", Vincent "Vin", Josephine "Jo", Gwendolyn "Gwen", Rebecca "Bec" and Katherine "Kate".
